I'm kind of partial to half-elf multiclass F/M/T or F/T depending on party size. Small party (2-3) I like F/M/T and big party a multiclass F/T. There is so much you can do with traps, pickpocketing/stealing, backstabbing, etc. As a multiclass you get both the fighter and the thief special abilities once you've advanced high enough (spike traps, whirlwind, UAI, etc). But with a dual class you only get the special abilities of the new class.

Elven Swashbuckler with a penchant for stealth and trap detection/setting. Not so much for the backstab (because he can't) but for scouting and then leading monsters into the traps. Nothin' says lovin' like a snare in the oven, or so the say goes... Or, at least, it should.
The swashbuckler is the hack and slasher of the Theif world and given a few levels of experience he can suddenly be very-very-very-etc. good at that. In pitched battles, armed with a few long swords and the proper Cleric support, the Swashbuckler can easily be the premier kill-counter in the party.
Then again, that is jsut my opinon and experience.

Itch. It itches to feel you cleave to the song of my mettle,
to yield and surrender in nearly every way;
if not in all the important ways.

For me it really depends on the group makeup. I like going for classing pure fighters or berserker's for a few levels, then dual classing them over into another role, so far my favorites for protagonists have been Fighter/Clerics, and Fighter/Thiefs. A high level dual classed fighter cleric is great because I grandmaster in flail and hammer, then dual wield the predicatable combo, with that, plus the saves from the cleric class, my main gets to be a veritable killin machine. Pile on top of that all those wonderful cleric spells like sunray false dawn flame strike, bolt of glory, and blade barrier, it can be hella fun wading into a pile of poor sods and mixing it up.
Fighter/Theives I only got into theiving cause there are no decent theives besides pc made or rather verbose gnomes, it can be lots of fun though, using high level fighter thaco and specializations, plus a nice backstab or two, my fighter theif can usually do pretty well at busting heads. Also the fighter levels mean that the theif can usually use longbows at a high specialization level (always a plus) and they have tons of hp for a theif.

most in-character with the thief style: Assassin. Poison, death-by-uber-backstab... you get the picture
best utility char: dual-class thief or swashbuckler/mage, multiclass thief/mage or thief/illusionist. but then the game ha some NPC's in this category
best combatant: dual-class kensai-thief. even without he cheesy Use Any Item this is the perfect "one shot (actually, one swing) - one kill" char, taking out the spellcaster with a backstab in the fights you can prepare for, and holding out VERY well in toe-to-toe fights and ambushes when backstab is impossible.
