Soul trap?

I am probably going to sound like a newbie here but how do you soul trpa and/or get the gem? I have not been able to figure it out

By far, the easiest way to soul trap is by using a weapon that has been enchanted with the soul trap spell. There are a couple in the game or you can have your own made. You will need soul gems which are found in various random locations, often in smuggler's caves. You can also buy them from some enchanters. The size of the gem you require depends on the 'strength' of the soul...
For example, cliff racer souls fit into petty soul gems while you must have grand soul gems to trap golden saints.

so... cast soul trap..than kill it, and the soul will go into the "empty" gem?

Yes, provided you kill the creature within the allotted time frame. This is why a weapon that casts soul trap on strike is an easier bet.
