If you dual-classed your Kensai to Mage at level 10, you can NEVER exceed level 10 as a Kensai. The Mage levels will continue to progress normall, but as a Kensai he will never progress beyond level 10.
If you wish to progress both classes, you would need to create a multiclass Fighter/Mage and then use Shadowkeeper or some such game editor to hack them to Kensai/Mage.

Really depends on style and what you are looking for.
Personally a zerk/cleric dual or multi class and SK it. Personally I dont have a problem with giving a kit to a multi class.
If you are soloing I would stay away from a zerk cleric personally as I suspect it is far more challenging then some f/m combo.
You might enjoy a c/m combo as well putting cleric spells in triggers.
If you are playing in a group I would stay away from triple multi classes and stay away from to many multi classes period(smaller groups this is okay).

Shadowkeeper's pretty self explanatory to use if you understand the game. If you don't undestand the game, it may produce anomolous results. Once you know the parameters (like THAC0), their meaningful ranges (-20 to ~+30) and direction (lower is better for THAC0) you can pretty easily edit saved games. Try it out with some small changes first.

I believe at this point you can just change your character from dual classed to multiclass and change him to an elf/half-elf. You really shouldn't have to SK much. But releastically this sounds like one of your first times through the game I would just leave things as they are and get an enjoyment of the game before tweaks and mods.

No, it's one of the most powerful characters you can possibly make. Most people have their kensai/mages dualled rather than multiclassed thru shadowkeeper.

Actually, you will, if you make the character level 0 and 1 HP, with EXP unchanged - it will work fine.
Vanilla game = unmodified, unhacked game. I strongly recommend you play through to the end unmodifed at least once. But, it's your game, please yourself.

IMHO dual beats multiclass for most of the game. As nephtu pointed out, the best levels to dual at are 9, 12 or 13. Dualing allows you to become very high level in mage, which means Time Stop, Chain Contingency, Improved Alacrity, Black Blade of Disaster, Bigby's etc. Used right, those high level spells can make you extremely nasty.
The thing I miss most not retaining the fighter class (as in a multi-class situation) is the fighter HLAs (greater whirlwind) etc. Combine those with the abovementioned spells and you will be even more deadly.
