Don't bother with mulitclassing to a fighter, I wouldn't. If you create a Human Sorceress and make her proficient with a certain weapon, then give her that weapon, (I usually do greatswords as she won't be wielding and shields and a sorceress with a greatsword looks brilliant), then make sure she has decent strength and dex you should be alright. You'll level up quick enough anyway and get Mirror Image which, in my opinion, is one of the most useful Arcane spells in the game. I'm currently playing with a Sorceress with a Greatsword and a Druid with a longbow and am having great fun. Druids and Sorcerers are by far the best classes in the game, rivalled possibly by high level Monks.

I agree with you on the sorcerers, but what makes druids so good? I remember an Ease of Use component that buffs them up, because they were underpowered or something... Too bad that mod makes them ridiculously powerful...

Anyway, I think you could multiclass your sorcerer after level 20 or so. By then you will have 3 level 9 spells. You get you fourth and last at level 27, but I don't really think you need four level 9 spells. A fighter(10)/sorcerer(20) can be a great fighter, I think, with Mordenkrainen's Sword, Aegis, Mirror Image etc. And he will also be a good sorcerer. His spells will be easier to resist due to lower level than a singleclass though.

Renewed shall be the blade that was broken,
The crownless again shall be king.

I would take issue with a pure sorcerer; their BAB rises much slower than a fighter, and they only roll a pathetic D4 for levelup hit points (+ con of course). Adding a few levels of fighter can give you a couple extra dozen hit points for those tight situations where you can't escape melee combat, and enough BAB to ensure that your sword hits what you swing it at. High DEX in this game seems pretty worthless, except for the Reflex saving throw. I've never found a high AC to be very beneficial; focus instead on hitting power and hit points. All said, a fighter sorcerer can be very powerful. Just add fighter levels anytime you feel like you aren't fighting well enough or your hit points are too low. Just wait till you get Tenser's Transformation.

The problem is, if you level her up as a Fighter aswell, then her BAB and weapon prof's will be better, however you then have delayed spells. Obviously your spells will catch up with how far you are in the game because the experience is shared among one person. My advice would be, if you are to level her up as a fighter, wait until she learns mirror image, and then do it. Mirror Image will make it much easier, especially coupled with good dexterity and Phaen's Robe of Rags.
And Druid aren't hugely easy to use I don't think, they have a mixture of single target spells, defensive spells and area effect spells, none of which are as good as the spells other classes recieve. The main benefit of Druids are Call Lightning, Thorn Spray and Shapeshifting, all of which rely on correct timing to pull them off as thorn spray can wipe out the rest of your party before you can blink, call lightning takes ages to cast and Shapeshifting stops you casting and using ranged weaponary.
