Yes, cheese is good when you cannot for some reason get a character with even average stats despite hours of trying.
I have read on the net that you can save a game and then edit your character's stats in Baldur.Gam, but what program do I use to open Baldur.Gam so I can actually edit it?

I wouldnt recommand editing files manually.
Better use Gatekeeper, an editing program for Baldur's Gate.
With it you can alter stats, class, looks, items etc.

PS. What do you think are avarage stats when you cant roll it after hours?
