Is it possible to dual (or multi-class) a Monk and Sorcery? If not is there a mod out there that will allow me to do this?
Also as an aside I forget do the spells armor and Shield stack (both level 1)?

No.

Not exactly ... best you can do is get ShadowKeeper and try and fake it - create a Sorceror, and give him some Monk abilities.

There's really nothing to stack - both spells set your AC to a specific number (6 for armor, 2 or 4 for Shield). If you cast both, the Shield would just take precedence (being the better AC).
