Unfortunatly you can't backstab every creature, because you need to be invisible/hidden to do thet, so you can't backstab creature that see invisible like Dragons and maybe some other (mindflayers?, giants creatures?).

Invisibility or not doesn't matter for monks, at least as far as backstabbing is concerned - since they can't backstab anyway. Invisibility has no effect on critical hits.
About dragons: there have been enough reports of dragons being killed by a Quivering Palm that I think it's possible, although I have never done it with a monk myself.
About seeing the invisible: Only very few creatures can see the invisible without using a spell. Dragons cannot. Vampire Mists, Wandering Horrors and suchlike can. Pit Fiends can, but other demons mostly cannot. But as I said, for monks and their Quivering Palm it doesn't matter.
As for monks being nothing but a kind of fighter - yes, they are, but look at the monk-specific HLAs in the Refinements mod. That makes them different enough from what fighters would do, in TOB at least.

Not all can be backstabbed, thats for sure. They wont see you coming and stuff but cant be surprised on the backstab. Try backstabing an beholder.

No, the 2nd Ed Monk doesn't get an AC bonus from high Wisdom. That's one change in 3rd Ed that had me .
