Vote Barbarian. Damage Resistance and Rage is just awesome. Get the Helm of the Rock in ToB (+%50 Crushing resistance) and combine it with his innate Damage Resistance, and suddenly you've got a character who's nearly immune to many of the nasties you'll face (Golems? Pfeh). Blades and the like will still hurt him, but who cares when you can just get pissed off and lay some more smackdown :D

I can really recommend the monk. With all the AC bonuses he gets, you have around 3 AC right at the beginning (with 18 dex). Also, he is extremely fast, 5 attacks per round relatively early, and his damage goes up with level so it's stupid to have any weapons for him. You can even make him Lawful Evil! With all that, you could kick out everyone else than viconia and have her for yourself and never have any problems in a fight.

The only drawback in the monk that I have ever noticed is the lack of being able to have boots of speed. Not a large drawback, since by the time you've completed the Astral Prison quest to get them, you'll be as fast as if you had them on all the time. And once you get the ToB special abilities you get speed that is so incredible that the wind.... just.... gets in your way in a storm while running with the wind at your back.

I've just decided to start a new game with a monk and the rest like you have it....

Btw does anyone know if a monk gets any bonuses for a high wisdom, like NWN?

No bonuses for wisdom in bg2 for the monk. The monk is really very good in SoA but not so good in ToB where the lack of hitpoints can hurt the monk a little bit.

So I just wasted time once when I made a monk with 18 in str dex con and wis??? (the rest were 10 btw) Took about an hour to get the random attribute thingywhattayacallit to make that high a number....

Wisdom, Charisma and Intelligence scores can play some part in what dialogue options you get so perhaps not a complete waste ;)
