How do you beat these guys? What spells work on them? Which sort of strategy should I use?

Most would say that the cloak of mirroring and Baldurans shield is the way to go.
The mages way is to use spell deflection spells, wich mimics the mentioned items.
The thieves way is to lay a lot of traps onto wich the gauths are lured.
The warriors way is simply to bash away with everything he or she has.
My own suggestion is to use summoned undead to draw their attention. Then toss all the area affecting spells and potions you got at them while they are occupied. You will still get hurt but confusion, chaos, horror and greater malison is a vary neat combination to keep them away from yourself. A frightened and confused Gauth no longer uses it's eyepowers.

I had trouble when I first fought them because I assumed such magical creatures would have very high magic resistance, but they don't. Fireballs, flame arrows etc. take them down pretty quick. I haven't tried spell deflection and spell turning spells, but I would think with the large number of spells they fire at you they would run out pretty quick and not serve much purpose. Cloak of mirroring makes them no challenge at all, but I'm guessing you don't have that or you wouldn't have asked.
One spell I found very helpful is spell immunity. Gauths do the majority of their damage with cause wounds spells, and they also interupt your mages casting their own spells. Casting immunity to necromany allows a mage (fighter/mage if you've got one) to draw their fire, then you can move in another mage behind and get them both to cast fireball, then send in warriors to clean up. Worked for me

Gauths don't cast spells ... they use the spell EFFECTS as main attack, like your fighter uses his weapons. Beholders don't cast spells either. Both these creatures simply fire these effects off at targets, in a chaingun manner. Their supply is as infinite as your fighter has blows to deal out with his weapon(s).
Evil Eyes on the other hand, do cast spells. You see the pre-release effects of a spell in front of them, and you hear the incantations they make. This makes them more dangerous, because they have access to level 9 spells, like Imprisonment.
By the way, I didn't yet confirm this, but I believe these creatures also have a melee attack. If you get close enough, they seem to switch to melee instead of using their ranged attacks.

When encountering beholders & gauths in large numbers (Cult area & underdark at least) use this - it's simple and devastating. Scout ahead with your mage invisible and when you spot a group of baddies move out of their sight and cast a cloudkill to the area. Usually they'll move a bit around but never do they understand to leave the area. This works best in the beholder dungeon, where when attacking one guy all of the rest of them come to its aid. Just cast couldkill and become invisible - All the baddies come to the aid of one hurt baddie and just end up getting killed. Took me 3 cloudkills to finish of ~5 beholders (a few older orbs I think) and the Gauths which I didn't even count ...
