When 2 lightsabers cross one another in combat, what type of roll is made? What is the difference between dodging and blocking with your lightsaber?

Offhand, I can't answer that question, however, if you go to the dialogue recorder in the pause menu and press
*X button for xbox* or,
*"add to action queue* button for PC*,
you can look at all rolls, saves, and all other combat related statistics from the last (I think) 15 turns, in which the type of save would more than likely be listed. If this doesn't work, I suppose you could consult either the control manual, website, or (if you have one) a D&D manual.

I'm not quite sure what you mean.
But in combat attack rolls are made and defensive rolls are made, and light sabres in that regard works like any other meele weapon, except it has a deflector rating as well so you can deflect blaster shots.
Lightsabre to lightsabre is simply ordinary meele combat in calculations as far as I know.

From what I've seen, lightsabers act like any other "upgradeable" melee weapon with extra to hit and damage bonuses depending upon the crystal configuration, if any. It doesn't seem to make a difference if the target has a lightsaber or more mundane melee weapon.
If I remember right, attackers with blasters make a to hit roll. If successful, the deflection roll is made if the target is a saber-equipped Jedi. If that roll fails, the Jedi takes damage.
Characters with Uncanny Dodge retain their dexterity bonus to defense when surprised by camoflaged opponents and also get an additional bonus on their save rolls vs. grenades.
