Yes you can train Handmaiden to become a Jedi Guardian. When in the Ebon Hawk, ask her to teach you Echani fighting styles. You can ask her to train you three times, and after each battle you have with her, after you win, she will ask you about the force, first about how it feels, then next about why you went to the council, and thirdly to teach her to become a jedi (talk with Kreia before you train her as a jedi, to learn about her past).

I'm guessing that you can turn Desciple (if your a woman) into a Consular, and you can Atton into a sentinal. I'm not too sure about Mira tho...never got a lot of influence with her.
Does 'human' include Mandalore (That would kick ass if you can get Canderous to become a Jedi)?

Big Spoiler on Male party characters

No, according to my prima manual, Mandalore is the only human character that can't be trained as a Jedi. As for Atton and Disciple, I trained them both. They both proved to be very useful to me, though that opened up a can of worms between Atton and Disciple when I did it. Atton got seriously jealous of my time spent with Disciple. It never comes right out and says it with Atton, but it's obvious he loves you. Disciple confesses to Kreia about it later if you earn enough influence points over him by attempting to take her on in order to protect you.
