The below contains specific references to story and strategies about gaining enough influence to turn characters to jedi.
With all NPC characters, I had to sacrifice light side points with my dark side character to earn Influence. I don't think there is a way to make them to see the virtues of the Dark side before they are jedi. Mind you I was >75% dark, but I had to take a few LS points here and there with them in the party. If you want to do something really evil (kill defenseless people for no reason) then do it alone and you won't affect influence. I've been through dark side twice, so now I have down when not to have party members (stealing from apts in Telos, killing bullied refugees, lying to single mothers in front of their kids... etc). As a Light side character (also twice), I converted most very easily.
Important influencing points in the story:
Handmaiden (male Exile only)... you will have to beat her on the ship hand to hand all 3 times. If you don't level her up at all, this is a breeze. You will have to gain experience between each fight. At most, save one of the nar Shadda refuge saps to complete in front of her (one that doesn't take fighting, of course). Doing this I convert her to a jedi at lvl 6 soldier / lvl x guardian.
Bao-Dur... we all know we want BD with a double red saber and tatooed with Sith ink. You only have to do 3 things: #1 baby him in Atris' Academy and make sure he's ok. #2 take him to Dantooine right away and talk to the investigator about the sensors. Find them in the Shyrack Cave and talk to the investigator again refusing the extra $$$. Talk to him after every time he speaks in a cut scene. If this doesn't turn him to a dark guardian, go to Nar Shadda and fix the speeder with him and Atton in the party. You get the pieces from Tien's workshop, the Docks Pylon 3, and from the Ithorian who wants to leave the planet. You get influence by letting Atton and BD help you fix the speeder (Serraco territory in the south). Also much XP.
Atton... respect his psychic ability, suggestions, and kill one or two innocents, but ask him how he feels about it. This will gain, not lose influence like if you do it infront of Handmaiden and Bao-Dur. Then trigger the deserter convo and go from there (see the Jedi link). The speeder will also get him over the top.
Kreia... influence is for experience only (but lots of it). Stay gray with her and ask her opinion a lot. Some scenes are there just to make her hate you, so don't try to be perfect.
Disciple... (female Exile only) I have only turned him with a light sider (I like my angels with white wings). Turned him immediately in the underground. Never took a step. You might want to level him up fully if you want another tank, or you can make him a support by going soldier 6 / consular x.
Mira... (LS only, male or fmale) Mira is a challenge. Before you do the Jekk Jekk Tar, make a super blaster pistol. Spare no expense, it's worth it. When you have to fight Hanharr, don't level up. Suit up with anti-slashing armor and melee shields, then run through the mines (she won't trigger them). Turn and shoot, then disengage and run. Use the melee shields to protect you from the Ubese and the Kath hounds... a strong enough blaster will take about 3-4 shots to kill and Ubese. Go north out of the arena and left. Let in the Exile and let him/her kill the rest and clear the rooms. Don't take her on Goto's yacht. After all is said and done, talk to her outside the ship until you've heard everything, then inside the ship about being restless. There's another link for the rest. Lvl 6 Scout / lvl x Sentinal. She has dueling, but go Dual wield anyway, Sentinal gets enough feats to make up for it.
