Help me obi wan kenobi, your my only hope:
I was playing TOB and was finished in amkethran when I noticed that my main character who was an lawful good Undead hunter, is now neutral evil. I still have my abillities but am starting to get the penalties for poor roleplaying like permanent party member death.
Does anyone know what went wrong/ how to fix it?
Help on alignment change!

It's difficult to change you alignment in BG2, but it is possible in places. The most obvious of which is the "Hell Tests." Chances are you took some of the evil paths there, and it shifted your alignment at some point.
You can cheat to change it back, if you use "Shadow Keeper." I doubt there's any legimitate way to fix it.
There is a mod "Virtue" that complexifies the alignment system, making it easier to gain or lose alignment (i.e. ala Torment or NWN:SOU). Doesn't sound like this is your cup of tea, though.
As far as permenent party member death goes, this is something that has always been possible in BG or BG2. It simply means that prior to dying your party member took an incredibly large amount of damage. The only way to fix this is to reload.

Isn't permanent death supposed to be impossible in Easy Mode? Oh, and where are some other places to change your alignment other than the Hell tests? I've never found any other spots, though I tended to stick to my Lawful Good path with a Paladin.

That's what I thought until I attened a lecture held by Fable on the properties of Raised Dead .
It turns out, that when I character died, their hitpoints aren't neccesarily at 0, they could be at a negative number. Raise Dead will only help a dead person if their hitpoints are greater than negative ten, otherwise they are permantely dead.
Easy only protects your character from such spells as the permanent from Death spells, in other words, it prevents your characters portrait from disappearing.

In memorian: Fiona; Ravager; Lestat; Phreddie; and all of those from the 1500 incident. Lest we forget.

Maybe you took the evil path in one of the test that the Solar gives you while in the pocket plane?
