After performing certain tasks on the second planet you visit, you'll be trained in a Jedi profession of your choice. The tests are ridiculously simple. Once you receive this training, all future experience will be conditioned by this new profession. You'll get your powers.

Are you on Tatooine or Dantooine? If you're still on Dantooine, then you probably just have to level up again - when you chose the Guardian class it should have immediately leveled you right there and then. You don't get access to the powers and abilities until you manually select your powers.
If you have completed the second test and received your lightsaber crystal, you should no longer be gaining levels as a soldier - if you're still gaining levels as a soldier at this point, then something has gone wrong.

No, you haven't. As I said before, you haven't gotten yet to the planet where you can become a Jedi. That's all there is to it. Really.

I don't want to be repetitive, especially when all I have to say is, "Something is probably messed up," but since there are conflicting responses to this matter...
You definitely should have Jedi levels by the time you get to Tatooine. As Shaedar said, you should have gotten your first Jedi level (along with force powers and the ability to use a lightsaber) after you spoke to Master Dorak on Dantooine and told him you wanted to be a Jedi Guardian. The conversation should have ended with you getting an automatic level up. So if you are not able to level up at all, or if you have leveled up since then but the level was not a Guardian level, then something is wrong.
Bryn's correct: I was momentarily confusing Tatooine with Taris. Basically, your progression is Taris, to Dantooine, then with a choice of locations. If you've done Taris and Dantooine, you should have your Jedi profession. You should not in any case be able to get to Tatooine without first traveling to Dantooine. It's the map piece on Dantooine, after all, that gives you the location of other planets; and it's on Dantooine that your PC will be trained as a Jedi.
Please check to make sure you're on Tatooine, and not Dantooine. It's a common-enough mistake to confuse the two.

I may have missed this, but--how many levels have you made since leaving Dantooine? And do those levels still show up as additions to your Soldier rating?

Alright, i have appeared to have fixed it! (i hope!! lol)
I found something called a saved game editor, and i gave myself 1 jedi guardian level, and now i am leveling like i should (well my exp is going towards that.. lOL)
