Naturally, I collected all 3 when I had the opportunity. With as few spoilers as possible: is it worth lugging around the 2 unused hearts or can I safely ditch them.

to my knowledge (which is, at best, severely limited), I know of no reason to keep them.

use one to re-charge to planer sphere and either get rid of the rest or err...roast em over a fire...they might taste good...who knows

So did I, drop them, the sphere "cant take it captain" anymore.
You only need one.(you could make some Demon Heart flambe, but the game does not alowed that)
