I'm too lazy to try this out, so maybe someone can tell me. Is it possible to dual class from paladin or ranger? Here's what I mean:
If your paladin or ranger becomes fallen, he becomes a plain fighter. At this point, it is possible to dual class to mage, cleric or thief (for the ranger, since paladins are always LG). Now, there are several instances in the game where a fallen paladin or ranger can regain their abilities. So would a paladin-->begin stronghold quests-->become fallen paladin-->dual to mage-->regain fallen paladin levels-->complete paladin stronghold quests result in paladin/mage?
Of course, the usefulness of a paladin/mage escapes me, but still... =P

It's impossible, he's still a paladin albeit one that have lost his abilities.

The program just can't do things like that, but in PnP it is possible. I play a dual class Ranger/Paladin. Good fun watching chaos and law clash in one character. And I'm pretty sure you could dual into a paladin/mage, though why you;d want to I wouldn't know.
