Before we begin to have fun with this topic we are going to need a few guildline to make this discussion more fun and fair.HLA aren't an issue here because the class won't be at the levels to have gained any.The character max level are those which are allowed by Shadows of Amn without the experience cap removed.With that in mind lets have some fun!
My Favorite class is the F/M/C.This class is packs alot of thing into one.If I am dealing with a mage then I can easily breach there defenses and finish them off with my fighter skills.If there is a really tough fighter on the field then I buff myself up with cleric spells and go head with them.Being able to cast stone skin in the heat of combat is priceless.The thing that I really love about this class is that I can pretty handle anything.The cleric spells are good for dealing with mind flyer and vampires.Being able to cast healing spells is another benefit from cleric class and with the mage class I can summon some pretty good help.The Fighter class allow me to deal emenies that are magic resist much easier and with all the defenses being provided by the cleric and mage skill I tend come out of most battle without taking to much damage if any!Stone skin and Mirror Image can easily deal with enemies thieve and at higher level blade barrier turn them into toast.
What is your Favorite Multi-Class and why?
Fighter/Druid would be my favourite class. I started playing it in BG2 just to see what it was like and it really surprised me just how good it could get. Druids dont get many good spells, but the ones they get are useful and sometimes better than on the cleric list. My character was the ultimate tank, steaming in with iron skins and hitpoints falling out of his ears, releasing an insect plague just for good measure. The only downside to this is...to achieve such a good character you have to have a great roll to be fully effective, getting around 92-95 role in BG1 then adding tomes is the best way to do it. Even better if you choose to edit the game to allow druids to have elss than 15 charisma (never saw the point in that personally) to free up more ability points.

I usually prefer dual class characters to their multi-class counterparts but one of the few exceptions is the ranger/cleric.
In my experience this character is very flexible and can be deployed in a number of roles - tank, healer, scout, summoner, bombardier.
When wielding the Flail of Ages and Crom Faeyr they are formidable, even golems fall easily. Of course like all multi-class characters a great role really helps as they need good scores in STR, DEX, CON, WIS
You gain a favoured enemy
Two free points in two weapon fighting
Ability to cast all cleric and druid spells.
Now if only there were a bard/ranger multi-class

My Favourite is the Cleric/Theif (especially half-orc) They get all the nice things that a theif gets and can heal and do other useful buffs especially when dealing with undead. Backstabing with a club or staff seems strange at first but you soon get over that!
The next choice is Fighter/Mage/Theif. Playing one solo actually quickly becomes too easy! They get exps for trap and lock removals as well as scroll readings it's like being on D&D steroids. - Curdis !

I really hate spells that change my own character's appearance for a lengthy period of time. Stoneskin is one of them. I can't stand the grayness covering my entire body while wearing such a beautiful piece of equipment as the Robe of Vecna. Of course I could switch to Mirror Image, but since that changes my character's appearance as well, and isn't that reliable, I tend to avoid the mage class altogether for my PC lately. I know there's always the priceless level 6 spell 'Protection from Magic Weapons', but it just takes too long to wait for that, especially when you’re multiclassing.
For these reason, I rarely pick a Mage, Druid or Bard for my own character.
Don't even get me started on the cleric, because the Divine side will never appeal to me. Actually, I tend to use a character as I would picture myself, and that would be without any Arcane or Divine intervention.

I would have to say the Cleric/Ranger for the multi class, they have a fair amount of power with cleric weapons, and they can cast many high level cleric spells(symbol, death etc.). For dual class, the most powerful I think is the Kensai dualled to mage. but my favorite is A high level assassin dualled to mage(at least high enough for the traps). that provides thieving abilities and some battle strength. this is best used when soloing but its up to the user
