Spells that were left out
I posted this down in NWN, but really, it belongs up here. It's all about my take on the spells that we all *know* should have been included, but accidentally got left out at the end because of deadlines. Here are several that were obviously intended for inclusion, and just didn't manage to make it:
Summon Economists. The number of economists and the radius of their level of generative boredom depends upon the caster's level. At level 3, the caster acquires an MBA student who asks questions about profit/loss ratios. At level 30, you get a World Economics Conference with speakers who argue whether inflation is worse than recession, and if the environment is an issue worth addressing in the near future.
Sink Drain: This opens a channel between the caster's plane and an energy plane consisting entirely of plumbers. They unclog sinks and toilets, smile a great deal, and willingly accept Elminster's credit card for payment when you steal it off him.
Create UnCola. This spell creates an anthropomorphic uncola 10 levels below that of the caster. It's main weapon is spritzing the enemy. At high levels, the uncola morphs into a Pepsi Demon, with the ability to summon Britney Spears wearing painted-on jeans. This invariably freezes male attackers, though there is a chance that male party NPCs with low magic resistance will also freeze in place.
Globe of Insensibility. This spell renders the caster unconscious, while creating the illusion of listening carefully. Wonderful at boring parties.
Emoticon: Happiness. Creates a 2000-pound giant smiley face that drops on a single target.
Call Lightnin'. This spell puts a trunk call to Lightnin' McKirk, an especially dazed prizefighter who retired in 1973 and currrently lives in Pismo Bay. McKirk will do little but grunt and laugh loudly, but this sometimes has the effect of relieving tension at the end of a long day, and he's good for a laugh.

Summon; Geordie- The caster opens a special gate from The Elemental plane of Fog and a bloke from Newcastle appears. the summoner has a 20 % chance of summoning whoa lass as well. The geordie( and his lass) will starting talking in their native dialect which will render the listener( 30 ft radius) utterly bemused. The caster simultaneously invokes a translator to prevent his party from feeling the effects of the spell. the listener is allowed a saving throw at plus 3. If the listener makes his saving throw he is allowed to walk away shaking his head saying, "Was that English?". There is a 5% chance that the Geordie will be summoned inebriated in which case the listener will have no saving throw.
The effects of bemusement last 3 rounds +1round/level of caster, and will drain wisdom at a rate of two per round.

".I guess soldiers have been killing other soldiers quite a bit; I believe it is called war."
Or what about;
Emotion: "You spilled my pint".
This causes any recipient within a 60ft cube to gain the patience of a drunken dock worker from Glasgow in a crowded pub on a Friday night. The recipient will first start to prod the closest person/monster to him and then accuse him/her/it of spilling the aforementioned intoxicant. This will result in fighting betwixt former allies. The secondary affect is that the recipient will then start to target other members of his/her/its party with such notions as " Are you looking at my bird?" and "What are you looking at?". The recipient is allowed a saving throw vs polymorph at +3 or suffer the
consequences for 4 rounds. The casters' party are immune to this although there is 20% chance of suffering 1D2+1 of incidental damage. This spell is particularly effective in conjunction with the Summon Beer Bottles spell.

Melf's Minute Pies: Invocation
Range: 60ft
Casting time: 4
Duration: Special
Saving Throw: None
Are of effect: 1 target/pie
This spell enables the mage to cast small custard pies similar to ones used by Harpo Marx (one pie per experience level), each of which bursts into a splatter causing 1D2 of Charisma damage. If the recipient's Charisma falls below 2, his circle will change from red to yellow (custard pies) and get morale failure for 1 round per level of the caster. If the recipient is within a party of 2 or more, morale failure occurs if the target's Charisma falls below 5. This is particularly devasting against dwarves. The pies are considered a +3 weapon for determining attack rolls.

Crirrick- Illusion
Range-Caster
Casting time-5
Duration-1 turn
Saving Throw-none
Area of effect -20ft
Upon casting this spell, the mage gains special speaking properties similar to those possessed by Horse racing Commentators who are describing the final few furlongs in an epic derby. The spell grants three abilities; the first of which is that any enemy mages/clerics caught within the radius lose concentration, thus disrupting spellcasting, due to the sheer volume and speed of language the mage utters. The second effect is that the mage is temporarily granted enormous quantities of oxyhaemoglobin, in effect allowing the mage to stop breathing and concentrate on talking at length for the duration of the spell. The third ablity is that the mage will able to recall over 1000 different horse races and describe those races' final few furlongs at extreme speeds. Enemies within the radius of effect and who have Wisdom's of 7 or lower are prone to losing considerable quantites of gold and /or precious items, believing that there is actually some kind of horse race taking place.

Summon Analyst - Summoning
Range - Visual Sight of Caster
Casting time - 9
Duration - Special
Saving Throw - Special
Area of effect - Single Enemy
Upon casting this spell, the target finds him/herself prostrate upon a low divan, staring up at the bespectacled face of a devout psychoanalytic analyst. Target is forced to discuss his id, ego, superego, and various nebulous symbols ferreted out of half-remembered dreams both seriously and at length -- as if these neologisms actually had meaning. Additionally, target is forced to fabricate some childhood trauma in which every current obsession or difficulty has a suspiciously clear and obvious link.
Target makes a saving throw according to the following table, based upon solvency:
Very Wealthy: -10
Wealthy: -8
Upper Middle Class: -4
Middle Class: 0
Poor: +10
Destitute: +20 (automatic success)
Spell Duration:
Depends entirely upon the length of time the analyst has remaining upon the mortgage of his second house. This varies from between 2-21 years. Roll a d20+1. During that period target, if he fails his save, experiences deep depression, followed by only occasional moments of joy. Overall melee capability severely impaired: -4 to hit, -4 damage. Intelligence is drained 2 points permenantly, Wisdom 5 points permenantly.
At the end of the psychoanalysis, roll a D20. On a natural 20, target is "cured" and is returned to the state in which he began analysis. On any other roll, the negative melee effects are made permenant.

Find Unfamiliar (Summoning)
Level: 1
Range: 30
Casting time: 2
Duration: Permanent
Saving throw: none
Area of effect: Single target
This spell only is classed with the other level 1 spells because it is generally developed by students looking to confuse their mentors. In later life, this spell is used to torment enemies. When the spell is cast, the target becomes irrevocably attached to something unusual- it could be a rock that wants to be the caster's friend, food prepared a certain way, or robes that follow some arcane fashion sense. As a result of this, the victim becomes obsessed with the thing in question, frequently wandering bemusedly away from the caster, muttering "Squeaky? Put down that llama!"

Minor Globe of Irritability. Once cast, this spell renders everybody in the area extremely bad company. Verbal fights break out, and divorce papers usually are filed the following morning.
Agannazar's Tanning Lotion. Upon casting this spell, a magical ointment spreads across rough, dry, chafing skin, soothing away pain and providing relief from the minor aches of sunburn and inflamed muscles. The scroll is available over the counter; check with a local seer if problems result.
Conjure Lesser Televangelist. This spell summons a lesser televangelist to do the caster's bidding. The televangelist has several unique spells, including Increase Gullibility, Blinding Smile, Aura of Infallibility, and Monetary Telekenesis. This spell requires rigid concentration after the casting in order to implant control in the televangelist's psyche. If the caster fails to establish this control within three rounds, the televangelist will summon a monster called a Large Congregation, with ten hit dice and the special ability to Express Outrage. One item of note: the televangelist, once summoned, never leaves.
Meteor Slam. When the caster utters the words to this powerful spell, a giant meteor over three miles in length and ten miles in width will immediately hurtle down from above, killing everyone in its radius, including the caster, at once. Great for parties.
Secret Word: Constipation. The effects of this spell really don't need to be explained, do they?

Improved Doc's(Devastation)
This dangerous spell should only be cast after a protection from evil spell has been cast on party members. Unlike the spell minor Doc's, there is a 60% chance a size 8 pair of boots will appear dealing 2d8+1 damage;a 30% chance a size 10, steel toecapped pair will appear dealing 2d10+3 damage; and a 10% chance Vinnie Jones' Doc's will appear dealing 5d10+5 damage. All Doc's are fire, acid and cold resistant. Note this spell works particularly well with Abi-Dalzim's Horrid Hooligans.

Anyway, all of you have forgotten that in the original Baldur's Gate - there was a 1st level wizard spell called 'Summon Cow' which isn't implemented in BG II!!!!!!!!!!!!!!
I can't remember it's school or anything, but it's definately one they've left out.
... I don't know about the rest of your suggestions, though there were very good ones
