After several reloads I have decided that the Demon Knights (by the Kua Toa) are too difficult for my party composition.

My question isn't really on how to beat them as I know if I get durable summons (Mordy's and Skel Warriors) and another solid warrior on my team I can slay them (not to mention I used up my rod of ressurection).

I would prefer to return at a later time and crush them rather than scratch by upon reloading.

Can I return to the underdark after emerging????????????????????

Yes you can return to Underdark after leaving; and remember to loot the bodies for The Girdle of Frost Giant Strength used in the Crom Faeyr creation.

Agreed with Fenix.

Note that it's possible to kite them- that is, lure them out oen at a time, by leading them. To do so, have your party outside the room (preferably somewhat down the little bridge outside), and as your summon hits the altar, run back to the entrance and out of the room (if you're hasted, none of the knights will see you). Then, enter very slowly until you're in the sight of one knight. Lure it out, kill it, save, and repeat.

Obviously, it's up to you if you're ok with using this tactic.
