Playing an evil party, having fun with it, and would like to wack innocent NPCs whenever possible. It's fun from an RPG perspective, the fights are often good, and sometimes some cool items.
Any NPCs that are critical later in the game? I don't want to kill like the wussy druid couple, only to find out that in Chap4 I have to get an item from them...
Anyone I shouldn't kill?

Which can actually make sense from a role playing standpoint as well. There is little so satisfying for an evil character than to let one lover think that they have been reunited only to watch you run the other lover through.
You can also get some ok items from some NPC's. You don't find anything great, but you do get a couple of goodies.
Aerich was spot on with his answer. AFAIK, you can pretty much kill anyone else except for Oswald, his niece and anyone in a named town.

Yes, if you kill someone critical, the game will end. I remember because I once killed the leader of the town (can't remember his name) because he told me to go with Oswald... apparently the game disagreed.
In memorian: Fiona; Ravager; Lestat; Phreddie; and all of those from the 1500 incident. Lest we forget.
