Try to avoid spoilers, please (though I have played the game through).
One thing I never managed to figure out is wether Mandalorians were related to or the same as humans. Canderous and various other 'lorians through Kotor 1 and 2 look just like humans - I mean, no tail, no extra/missing limbs, and no wierd skin. Are they humans but just have a radically different culture, or non-human look-alikes like the Yuzhan Vong?
Mandalorians: Culture or Species?
i always assumed they were humans that had banded together to form clans and who had a culture based on the concept of a warrior. their leader is always called mandalore so i think that is where they get the name mandalorians from, rather than the name of a planet or species. of course this is just speculation on my part and just opinions i have formed from playing the games. somebody who is really knowledgable about star wars could probably prove me wrong 
The echani look like humans but are a different species. I think, but may be wrong, that mandalorians, humans, and echani were at one point all the same, but during the evolutionary process split off and became seperate species.

He heals through extra implants, you see in KOTOR 2 that Mandalore has a variety of implants to choose form as extras to the equipable ones.

i definately think they are human now - just did the mandalorian base again and after killing that big beast for them and bringing back the ear, the mandalorian guard captain actually says that if you were not a jedi then you'd be a great mandalorian, which (to me at least) implies that mandalorians are a group of humans that have banded together rather than a species/race.

I believe that if you go into the extended cannon of the star wars universe it says that when space travel was first possible lots of people got together and went to lots of different places. I'd assume that most of the human looking species just sorta evolved on their own after having left their origianal homeworld. But then there were races like the Sith that were not human at all but were close enough to humans that when the dark jedi went there to hide they were able to breed with them and the two became one race over eons. There is a ton of stuff on teh intarweb about it.
