What makes you say they don't have them in the US? I live in Texas and said that not only does my wife make them, I've tried ordering them in restaurants. They might not be as prolific as scrambled, over easy/medium/hard or sunny side up, but you can still get poached and soft-boiled egs here.
I just haven't found a restaurant that makes them well, that's all. It is considered a more yuppy-fied way to cook them and I don't frequent those types of eating-holes.
On the same tack, tea isn't very popular here (not as popular as coffee anyway and not anywhere near the popularity in England). But that doesn't mean that tea wasn't around before the US was formed. It just means our tastes have gone a different way. You have tea and crumpets, we have IHOP (I never said we went the right way, just a different way).

You are right of course, Darzog. It is far from conclusive. And it is counter intuitive that they should be a late development. But soft boiled eggs are such a pleasure it is hard to believe they would not be very common if they had come from the UK at the start. It is not as if there was any reason to throw them in the harbour, and they don't need to be imported (either or both of which might go some way to explaining coffee over tea, perhaps?)
I think that you are giving us Americans way too much credit. I think the main reason we don't eat them more is we aren't smart enough to make them right. The eggs we make you can watch, so you know when to flip and when they're done. With soft boiled eggs you have to know how long to cook, and we're all a bunch of lazy slackers. We put the eggs in the water, go watch American Idol, vote 50 times and by the time we remember we were cooking eggs they're hard boiled.
We figure, close enough, slap on some salt and munch away.
@Rav: IHOP == International House of Pancakes. It's a chain of restauarants that specialize in breakfast (kind of like Denny's but the food is just barely better). In an ironic twist, their standard buttermilk pancakes (in my opinion) are the worst thing on their menu.

what can I say....my stomache decided that the In & Out health place wasnt cutin' it so we moved to IHOP...but then I decided to switch it.....go IHOP in the mornings and In & Out in the afternoons.........but now the closes IHOP is now a Chinesse Express place.....guess I can go there in the mornings

The picture you have is as good as it is likely to get I am not much of a photographer. I used to have goes at developing and printing b&w photos and that was quite good. But I have nowhere to do it now. Better to lift them from the web, now you can get copies of really good work
