Plus he can spend 3 years getting contacts and learning the business before he is responsible for his own shop. Trying to open your own business right from scratch doesn't usually work out, so taking a couple of years to learn from someone else makes his chances of success higher anyway. Good luck!
And the new job starts officially on Monday, but I've already started working on it, and will continue to close a few of my current projects over the enxt couple of weeks, so it isn't like flipping a switch.

It isn't forbidden, but you aren't supposed to drink until after work. Some people have a drink at lunch but most employers don't like it.
But what they don't know can't hurt them, right? If Mexican Martini's didn't mess me up so bad I might consider having one for lunch.
