Yes, I confess! My character has been collecting books, but lately she has repeatedly broken the law to do so. She tries to grab a tome when no one is looking (and stealthy she is, too), but if caught, will Recall to another location. Then it's a short jump to a Thieves Guild branch (where she's a Captain), a relatively small fine, considering how much she's making, and the book's hers. The notion of people with money using it to get away with whatever they want doesn't phase her in the slightest. Ordinarily respectful if not terribly serious about the law, she becomes obsessive when it comes to possessing books.

I too steal like mad!
Like you, my vice is also all the most excellent tomes found around the world. I once had such book lust that I stole the ENTIRE Vivec library area(it was fun).
I also enjoy collecting pillows and kwama eggs, I filled up 3 houses in Balmora with them(the houses were another shady acquisition).
Other than that my only other vice is magical trinkets. No matter how worthless, weak or unneeded an item is, if it is a magical ring, amulet or other bauble I cannot refuse it's call, and end up stealing it. Hope I'm not the only other packrat around.

If I can steal something instead of buying it, I steal it. It's a habit I picked up from Fallout 2 I think, I'd search each and every single person in the world just for items to steal.
Unfortunately I also load if I fail, since that's what I had to do in Fallout. Games like Baldur's Gate heavily hit failed steal attempts too so, I always end up loading out of habit.

In addition to books I steal clothing
I don't just mean the good stuff either, I often steal common skirts and the like simply because I like the colour or style.
I keep expecting to see all kinds of naked and semi-naked NPCs scattering the game world (I mean more so than there are already), all because my character can't keep her mitts away from their wardrobes

I have a rather haughty Breton enchantress (a blonde Lucy Lawless look alike) who is an avid collector of all the latest fashions to hit the streets of Vvardenfell (but only the finest garments - and matching accessories)
She would, however, be absolutely appalled at the thought of having to steal to add her her collection. She is not against the stealing in principle, she just finds it frightfully common, and would die at the thought of anybody thinking that she were unable to afford to look fabulous.

I have downloaded Clothiers, but I haven't installed it. I'm not sure if it will conflict with anything I already have, and as always I worry about FPS
Though.. I did just install AMS Fast Defrag which appears to be a very good memory optimizer. I just had MW up to test, and I was amazed at the difference in speed

Back to your question, I also collect soul gems. However.. not to use (I don't like too many enchantments), but to display, the purple ones are especially nice.

A couple of good mods for collectors who like to steal, dungeon crawl, or both:
Morrowind Toy Shoppe: Figurines, and W3 Rune mod. The former adds neat little statues of all sorts of creatures you encounter in the game, while the latter adds rare runes for each letter of the alphabet, all acting as different alchemy reagents (nothing over balancing; they hardly ever show up).

I have a collection of weapons and items over 10k in worth sitting on a table, as well as all the different kinds of Imperial Legion armor (I <3 my Imperial Legion) except the Lords Mail which I wear, glass armor, orcish armor, and some other stuff. If there was a rebel uprising, the residents of Balmora would all run to my house, equip themselves, and still have stuff leftover. I also have a collection of skulls and keys. And redware bowls filled with rubies, diamonds, and emeralds. Oh, and a display of Daedra hearts. I used to have a floating mini-city of 10k gold that I had hand crafted out of 100 gold piles, but I got rid of it in fear of getting an overflow bag. And I was running out of gold because I wouldn't sell nearly any cool looking thing I got.
I like collecting clothes as well. I steal them when possible, but with mods that's often very hard if not impossible. Ever try to rob the Metal Queen Boutique?
@DW: 'Clothiers of Vvardenfell' is one of the best clothing mods around. What do you think would it conflict with? I have a many a mod installed but I've had no problems - but obviously that's no guarantee.

My char (self-made thief with Alchemy skill) has bad habbit to steal/pick up every ingredient used in alchemy...
For example, I have collected over 200 pieces of Heather, +150 Large Kwarma Egg and so on...

well if its glass its mine!
i cant resist taking anything made of glass, its just so pretty...
mainly i have a few full sets of glass armour and about 10 longswords 20 daggers and so on, but if i stumble across a glass mine i dont give up until every last peice is mine.
since im a master thief though its not particularly annoying excpet when i got to ghostgate and two characters on a room had full glass on...
