You would cover every base with:
Elf F/M/T
Half-Elf C/R
Each can tank, and the C/R can cast every divine spell in the game.

Seems to be that you got it right the first time.
Elven Fighter/Thief with the DEX bonus and given BG1 and SOA-TOB can get u upgrades for that str, dex and con you will be able to handle most situations I should think.
As for the Half-Elf Cleric/Mage - same method for attributes enhancements - intelligence, wisdom and the rings of wizardry/acuity (or if you are especially sneaky you can have that Ring of Holiness at the begining of the game to help with your clerical spell list)
As for Charisma attributes (of which I think there are two places for, give em to your theif - make him a charasmatic theif for those buying discounts)
Given these factors (or with or without BG1 enhancements) u should still have two characters that can make it the whole of SOA given their skills.
The attribute bonuses that you can get in either SOA, BG1, TOB (not sure bout TotSC since I aint got it) and the versatility of both your characters - your fine if you can get the right method for both of them: Either of the three rings possible for the C/Mage with a some strength for a medium shield, and for the F/Thief - backstab with a longsword, melee,archer with composite longbow with acid/biting/peircing arrows for maximum damage, but also keep in mind once UAI comes in and the C/Mage gets High Level Quest spells - they will be unbeatable.
