Right now my henchplayer's that uppity Sharwyn. A FAQ said I should tell her to use her missile weapon. (She's carrying a sword I think.) Sorry, I couldn't figure out to tell to switch to a bow. And do I actually need to feed her arrrows?

No, but when you engage in a conversation with ANY henchman, there should be the option "I want to change your tactics" or "I want you to change what you're doing" or "I think we need to change your tactics". Following in that conversation are options where you can tell your henchmen to use different things - for example, how close they stay to you, if they should attack before you do, etc.
I'd recommend speaking with henchmen, anyway. Later on in SOU, you can tell your henchmen if they should continue on in their class or advance in another. Also, in the OC, talking to your henchmen opens up the henchmen quests, which can be fun to do and add a little to the overall RPG feeling in so far that your henchmen aren't just wooden figures following you around.
Also, no, you don't have to feed her arrows. You have no control over your henchman's inventory in the OC - that option becomes available in SOU and HOTU. In these two mods you might want to change stuff around ( giving them better armor, potions, scrolls, better weapons, etc ). Don't worry, a henchman using long-range weapons won't run out of ammo in the OC.

Guiding Sharwyn OK
I'm having a good experience, Sharwyn as my Hench. I tell her to guard me, and she has her bow ready. She fights when attacked. Her spells and music have been good. Now I'm jsut beginning my first OC game (third level Monk, 16 AC), but I like how our battles work.

Sharwyn's dying a lot ...
Sharwyn's dying a lot (I'm just exploring, chap 1). But I can just pick her up at temple and she's okay, right?
I tell her to guard me but she likes to charge at a mob of baddies and get hit a lot. I wish she wouldn't do that!
I like when she's not attacked, standing behind me, I fight better for her songs and we do okay.

That's what's bad about the AI given to the henchmen in NWN, I think. Unless you tell them to 'Stand your Ground' they tend to run off into battle nevertheless, and then again, even with Stand your Ground, I've seen Grimgnaw just ignore the order and go ballistic on the nearest enemy.
Yes, henchmen always respawn at the temple.
