Any tutu mods that tweak the NPCs?

For instance, I'd like it if Minsc were available as a Berserker and Kivan as an Archer.

Any way I can do this besides Shadowkeeper?

Nothing for altering Kivan, though, nor in BG1. And remember, the mod list in our SoA forum is your friend.

With TUTU v 4 you can select kits for every single-classed joinable NPC when installing the mod. I always had Kivan as an Archer and Xan as Sorcerer.... Unfortunately this feature was not preserved in EasyTUTU.

TUTU Tweaks have Fighter-Mage for Khalid and Assassin for Montaron component.

If you mean NPC Kitpack, then it's for BG2, not TUTU. Though Minsc might work.

He probably means the Tutu Tweak Pack, which does let you change Minsc to a berserker, and Kivan to an archer. I just used it, and was offered both; chose the latter. Lots of other choices, too.
