Ok it is powergaming, but how can i do this? I've never used Shadowkeeper? How do i use it to get her to the right lvl and thaco, etc?

Let's see, this has been a while, but I believe I can at least tell the basics.

I first make a character with the same classes, mostly to see what affects they get, but that comes later.
Most honest would be to set her hitpoints to what you think is appropriate, depending on the first levels of her new classes. I don't know if thac0 and attacks per round reset on their own, so maybe change those as well (basic is thac0 20 and 1 attack, I believe). Set the levels of her current classes to 0 (It's curious to note that some npcs like Jaheira and Minsc seem to have levels in classes they don't have, while others like Viconia don't have this. I'd leave those levels as they are).
The next tab is characteristics. Only things of concern here are the class (set this to cleric/ranger in you case) the kit (you can even let one of her classes be a kit, like a cleric/stalker). In some cases, alignment and racial enemy are important as well.
Spells are changed automaticaly as you level, so you don't have to worry about those, and I believe that so are saving throws. Some classes have innate abilities, however. Add those by clicking the kit button on the innate tab, and select the right kit and level.
You will have to change the proficiencies as well. I believe that when you set their level to 0, you can even choose the initial proficiencies, so you should set those all to 0 for now (though I'm not sure).
The hardest are the affects. These are things like the paladin's fear resistance and the kensai's improved armor class. That's why I suggested to start a new character, just copy its affects to Jaheira.

Complicated, and rather chaotic, but I hope at least a few things are clear. Just experimenting with it is fun as well, btw. ^^

Step-by-step creation of Jaheira the Ranger/Cleric.

1) Save the game under a different name.
2) Open the game with Shadow Keeper.
3) Use the slide bar under your portrait to shift to Jaheira.
4) In the abilities tab, set her experience to zero, all her levels to zero, her THACO to 20, her hitpoints to 1.
5) In the characteristics tab, change her class to Ranger/Cleric instead of Fighter/Druid. Choose your Racial Enemy. Don't touch the kit.
6) In the innate abilities tab, remove her shapeshifting abilities.
7) In the proficiencies tab, remove her proficiency points (select the profciency, then press the + or - button)
8) Don't touch the affects tab, Jaheira has none of importance.
9) Exit the program, choose yes, open your edited save game in the game itsellf. Level up. Save.

You're done. Unless you know how the use Cluaconsole, there's one last step you need to take to get Jaheira at the appropriate level:

10) Open up Shadow Keeper. Set experience to desired level. Save. Open edited save in the game. Level up.

It sounds more difficult than it actually is.
