Well, i personally prefer using two lightsabres.
However, your wrong in saying two lightsabres are more powerful. There not.
Two lightsabres:
- Main Lightsabre = x1 damage
- Off-hand lightsabre = 0.5 damage (or half damage)
Double-bladed lightsabre:
- Both Strikes = x1.5 damage
(ie, main hand = x1.5 damage. off-hand = x1.5 damage)
It is even said in the dialogue that the double-bladed lightsabres are "more deadly but also more reckless".
The disadvantages of having a double-bladed lightsabre are, you take a hit in defence and deflection and in close combat, you also seem to block strikes a lot less. Further more, you lose the ability to throw your lightsabre.
As for crystals, let me ask you this. There are only one or two really top-notch crystals for a lightsabre. Do you,
A) put all the good cystals in one single-handed lightsabre and use lesser crystals in an off-hand lightsabre.
Result: 1 uber sabre. 1 poor sabre.
B) put half the good crystals in your main lightsabre, and the other half in your off-hand lightsabre.
Result: 2 moderate sabres
c) put all your good crystals in a double-bladed sabre.
Result: 2 uber sabres (since you hit twice with a double-bladed sabre)
Me personally, when i play the game, i use two lightsabres. But, if you want raw power (and i mean, dishing out serious damage for your buck) using a double-bladed sabre is the best. Hands down. I've completed the game 4 times, working on my fifth. First two times, with two lightsabres, the last two times with a double-bladed sabre. As soon as i had the ability to make my first sabre right after Naa Shadaar. The easiest games i had, were using the double bladed sabre. Enemies were dropping like flies, BUT, i found deflecting blasters back at the enemy happened less and blocking swings in close combat happened a less. Usually i'd just stand there with my two sabres deflecting blaster bolts back at the enemy and giving them a few throws as well, but with the double-sabre, i had to avoid doing that as it didn't happen none that often. Plus, i had to be careful in close combat, as i didn't block so much. Though, that said the enemy didn't have time to attack once there dead. And with double-bladed sabres, enemies die fast. Very fast.
I guess it was intentional. Ultimate close combat expert, but poor at defence against blasters. Though, on the plus side just charge in and hack them down.
Try it. I promise you, the double-bladed sabre is far superiour blow for blow, than single or double lightsabres. And remember, if you put the best crystals in a double bladed sabre, you get all those bonuses on BOTH your main hand and off-hand attacks. Whereas, with two lightsabres, you usually have one great lightsabre (with the uber powerful crystals) in your main hand, and a lesser lightsabre (with lesser crystals) in your off-hand.
As i said before, i personally prefer two lightsabres. But, blow for blow, double-bladed lightsabres can't be beat. Hope it helps.

As LS said dual blades are best but the blocking and blaster defections are small probolems as you only ever fight about 4-5 dudes at a time so Force Jump, then a special attack plus if you equip your part with really srong dual sabers.... (mahahahahahh!) one time with 3 guardians my party took down 6 guys on 2 rounds as even my heanchmen prodded serious donkey (Unseen uni ref) with the dual sabres but the single blades had my char doing most of the work.

to me it seems easier to use two single Blades and it sounds like it from everyone else, the double bladed is stylish if you want to look cool, the only thing that's bad about it is the fighting when you fight it seems you can't hardly do any damage to your opponet and your character kinda looks clumsy but I haven't played it in a while because my disc is all screwed up KotOR I and II now I've got to buy a game buffer to clear up those scratches .

The damage output is largely dependant on the crystals and upgrades you're using. If you have a lot of them, two lightsabers are better. Especially for Jedi Masters/Sith Lords. Stick some +WIS crystals in both of them and you'll have some insane scores.
For damage output, you might want to consider a double-bladed, since if you just have one awesome crystal with +damage or +attack, it will apply to both blades instead of just one.

You can throw with 2bladed saber, and the damage doesnt change!(these apply in jedi knight3, jedi academy, not kotor!)
Also you strike 2 times with a saber in both hands!
Blocking isnt affected by sabertype but def, The higher it is the more you block!
The deflection is bad with two-bladed, little better with 1 saber, and you can reroll any failed deflection rolls with 2 sabers!
YOU DONT KNOW THE POWER OF THE DRUNKSIDE ill beat you up with my bottl ...lightsaber!!!And Drunk Side is a bar in KOTOR1... check these out! http://www.xfire.com/screenshots/drunkside/

Analysis of Attacking with Two Weapons
Single Sabres give you decent damage without sacrificing accuracy or defense.
Double-Sabres give you better damage, but cost some accuracy and defense they also give you the same effects as having two sets of the best direct damage crystal combos.
Duel Sabres give you better secondary effects like stun and sneak attacks, but also cost accuracy and defense, however, if you are duel wielding you probably have high DEX and Sabre finesse so if used with secondary effects in mind they are a very powerful combination.
I would give a pure consular a single sabre, a sneaky-sneaky Duel Sabres, and a pure melee a double-sabre(and armour).
YMMV,

PS. My favourite in builds are duel wielding Scoundrel/Guardians in KOTOR 1 & Gaurdian/Watchmen in KOTOR 2.
