Hey! Good guys can be funny, too! I reckon anything Minsc says is worth a laugh, with the Nalia-admires-his-style-so-M-thinks-she-wants-a-hamster conversation ranking particularly high.
Cespenar's "BTW, I organises your shoes, okay?" probably ranks as my favourite one-liner, mind... Reminds me, must do a Detect Evil on that Imp...

I wonder if any of the NPCs for the mods have any interesting lines/NPC-to-NPC dialogues... I mean Tashia, Kelsey, Solafein, or such.

At one point Minsc tells another NPC that they need their own hamster. Can't remember who he was talking to.
One of the best is from TOB. All NPC's are showing their loyality to the PC Minsc screams "Evil meet sword, Sword meet evil"

Actually, there are several instances of that. For example, in Shadows of Amn, Minsc will tell the main character that we should get him a hamster of his own, "or perhaps an ice weasel--whatever your taste."Originally posted by Sir Redweed

In Throne of Bhaal, Imoen tells Minsc that she would like to get a hamster, since Boo has such a calming effect on Minsc. Later, Nalia tells Minsc that he has been an inspiration to her, and he says, "And now you would like a hamster, right?" She meant nothing of the sort, of course, so she says, "What?" and Minsc says, "Just a guess."

The dialogue between Korgan and Shagbag ("still a lant-gulping dirtchute") is a highlight worth playing the game only for it, some smaller dialogues of Korgan ("seems like they've painted his place with his innards") and Korgan's story of his former party belong to my favorites. Korgan's reaction when you transform to Slayer is pretty cool too.

I also like the dialogues with Tiax in the asylum. And my favourite, one that I can never resist is talking to Dradeel, the aged elven mage who ends up saying "You've the rank smell of Golodon the Unmanned. Bastard!" I thought something funny should come up between him and Jan Jansen but sadly no.

Long ago I used Infinity Explorer to find and copy all the dialogs of Jan and Korgan to a Word file. Per your request here's how it goes:
