All +1 and +2 armour is in theory magical since the +1/+2 is the magical enhancement on the armour so this may be a good basis to use. Ankheg armour is +2 so this would explain why the ring does not work with it.

There is still the anomally that in Tutu you can wear a +2 ring with Plate +3, and in BG1 it is impossible. "Curiouser and curiouser" said Alice.

Maybe I'm remembering wearing a protection item with Full Plate instead? Too bad, to me it's composition would make sense that it's an amazingly hard light armor, without magic.
I'd guess it all comes down to various behind-the-scenes flags being set appropriately (or not) for each object, when the game was being developed. For example, I've read before that some obviously-evil non-joinable characters are setup as Lawful Good alignment. Doesn't effect anything, until you cast Know Alignment.

Never said the ring wasn't magical. "...for Ankheg Plate Armor I absolutely vote It's NOT Magic."
