If you're willing to fork out (seeing what Blizzard has done is giving me incentice too), what character and race will you? Some of the character previews they've released look awesome. Warriors, Magi, Shaman... The list is endless.

warlocks and druids. My oh my, there are a lot of possibilities.
Not sure what I really want to play. I'd be interested in trying out all the races. I think it would fun to find out who around here is planning on playing this one, it's always more fun to game with those you know rather than strangers. Not sure if available servers for the game will separate by geography or not. The W3 battlenet seems to.
Anyway, to answer your question, I'd have to start with a tauren; really dug them in W3. But over time, I'd rather have several characters of different races moderately powered than some uber WoW stud, even though it leaves one prone to being preyed on by the twits who will play the game. Not sure what they are implementing for a set of PVP rules.
Maybe I should start a few threads, I have a lot of questions for the quorum around here.

This is the beauty of the system they're introducing. PvP has to be mutual consent, and it will only occur in 10% of the gameworld, otherwise, it don't happen.
Death is not permament, it's just a bit awkward, and it looks as if with your sign-up, you get ten character "slots" to experiment with.

Then the only question remaining Nippy is whether a chivalric servant of Lordaeron hailing in England and a Tauren Shaman in the states will be able to play on the same server.
I have very mixed feelings on the PvP environment. On one hand, it would be fun to play the game, gain some notoriety and become hunted or hunt one. The downside is if you are hunted, your days are numbered permanently. That doesn't seem plausible though as the hunted would have to be online to complete such a quest. For the most part, a PvP environment favors those gamers that have nothing else to do except produce a uber character who goes around making life miserable for newcomers.

LOL! I'm easy, we can manage.
I think thats why Blizzard are using the system they have done, that way they don't annoy people who don't want to PvP, and they give the opportunities for the people who want too. This is the thing - you don't have to go to extremes, you can do a bit of PvP, but you can also go to dungeons. If it came down to it, I'd prefer to balance, and have a reason for going into the arenas they create - someone insulted my characters honour, for example...
