I'm currently lsearching for a good druid build but I'm not sure what is the right way to go.
First of all, can druids learn to cast in animal form later on?
What is the way to go for a druid: Balance, Feral Combat or Restoration?
I'm thinking a combination between restoration and feral combat.

For the end game (L60) restoration is currently the most viable spec.
You could - depending on guild - go whatever course which interests you, but restoration is currently seen as "the" druid spec. And you have to make sure you spec high enough for the Innervate spell.
But naturally you could respec, and level up in Feral and then respec at or near L60.
As for the casting from animal form, then I don't recall ever seeing mentioned that it was possible, so I doubt it -but can't answer with 100%.
I think doing some balance and restoration is good, you need to get the Omen of Clarety spell (after a crit with your weapon, next spell is free) and Nature's Swiftness (next spell that takes less than 10 sec to cast becomes instant cast)
