is it possible to play as the red hair woman, from the box of the game?

Mods...?
Would it be possible to mod the games character select features, to include a model head/hair like hers? I don't know if it is easy to mod DS / DSLOA, i've never tried.
Perhaps there is a mod already out there? If not...i sense a void in the market, which could be exploited. The people demand the red haired, green eyed, lipstick lovely on the front cover!!

Yes you can play as her - except that the cover artist shows her in more detail than the game (DS1) itself does - when toggling through the character options you can match the woman's skin colour, hair colour and ponytail. What you don't get is the loose hair beside her cheeks.
Mind you, before too long you should have her hair hidden under a cap or helm anyway.
The sword and armour are both actual examples from the game (except again for the extra detail of spikes and upturned rim to her shoulder piece) but you'll have to look for them as you go through. I believe I've identified both - the armour in particular is a type you are unlikely to see until near the end.

There was (still is?) an official pack for doing Mods. I believe it can be downloaded for free.
Looking round the web, some people have put in a lot of time on some quite drastic appearance mods ("skins"). If you've some time spare you might be amused by the web pages on the "Elfgirl" project. (They were still there a month or two ago) Try searching from the Siegenetwork dot com site.
