I'd like to play a Weapon/Shield warrior with some magic buffs. Which class do you recommend? I don't have much experience with this system. Are Swords the best single weapon option? Or Sabers? Axes?

IIRC, the weapons are pretty well balanced, both in what you find and how much damage they do. I used a warrior in one of my playthroughs, and that worked well enough.

You can't wear metal and cast spells in the game, so a warrior / caster mix isn't really an option. You could be a rogue / caster though, and use a wooden shield.

The only "magic&melee" classes I can think of are human Charlatan and elf Fighter and secondary consideration with elf Ranger. You may be able to make a melee character our of one of the other mage class too- spell weaver is a good option for attribute buff types and metamage is a summoner.
As for weapons, I usually pick the weapon that the character has the highest starting value in. You can enter expert mode and see which weapon has the default base value that is highest.
PS. best options depends on: what is that "highest base value" + what combat talents you want.
But is a Warrior able to learn magic?
No. Unless the architype came with spells, the architype cannot learn spells. As far as I know you cant be a warrior or soldier and then learn "Attribute Strength" etc. later.

As said by someone before, wear nothing metal... except the weapon
