I tried a party of 6 and one of 4,but with both the late game became much too easy.
Can you suggest me a party that is challenging and fun to play?

If you are looking for a challenge, don't take any clerics. It makes the game much more difficult. I find pure rangers and bards more difficult to play as a whole, so here is a party that should be more difficult.
Elf Ranger
Half Elf Paladin
Gray Dwarf Druid
Strongheart Halfing Rogue
Gnome Bard
Halfling Wizard
No Aasimar's, Drows or Deep Gnomes, who I consider the best races. You still have some people that can heal, front end fighters and a wizard, but no one that really stands out as a powerfull character. I would avoid maximizing any of the characters stats or minimizing any other if you are truly looking for a challenge.

I like it when the game gets progressively easier the closer to the end you get, it's like justification for all the build choices and exp that you've been amassing in the build-up. But each to their own! My recommendation would be the following:
Druids...
Of all the classes I've tinkered around with Druids seem to be the most frustrating, most notably when they have spells marked as 'only usable outside' which is quite the cause of much hilarity on a deep dungeon crawl.
But yeah, just go with a posse of Druids, the number you go with enhancing the difficulty each time.
Imagine that you are a posse of Jedi Druids sent from afar by the world council of Druids to help protect the tree.
Druids are neither proficient tanks nor splatter-fest spellcasters so the challenge should be fairly... um... challenging, lol, throughout!

I just remembered another party that I made up recently that was quite challenging. I tried to put together a party made up of characters from the Lord of the Rings. No clerics there, and you've got a fighter that specializes in bows. It was quite challenging. I decided to stop part way through because it took so long to beat enemies.
