When I started, i decided to be a Consular, as most of you know, Consulars are bad with combat.
This makes it impossible for me to beat Handmaiden in her sparring matches.
I'm trying to do this to make her a jedi. Is there any other way to make her a jedi without sparring?

I can't remember off-hand how the sparring works, I think it is based on your character level rather than hers.
So the method I would suggest is to not level her up until you have completed the sparring and gained enough influence - not saying it will be easy for a consular - but the extra levels and hit-points will make you last longer.
I routinely do this in KOTOR II with Atton, Bao-Dur and Mira - to maximise their Jedi Levels - can make the game difficult - but T3-M4 and Kreia can make up the shortfall. It works best with Atton if you go to Onderon first (as you cannot take him with you anyway.)
Another suggestion when playing a consular is to up your dexterity, as Handmaided uses mostly Power Attacks (and by not levelling her you can keep her from gaining more powerful attacks) with a good dexterity you should be able to dodge them.

also don't be afraid to move around and use sneak attacks on her... I know your in close quarters with her, in the cargo bay... but, you don't have to just attack her head on... hit her and run away, and keep moving around (it can cause her to skip her hit turn, or make her miss and you take less damage) it may seem like kinda of a cheap trick, but, it might just get you through the dual, to get on to the next round, with her (which I believe you can use weapons in?)
