I've played KOTOR through several times on my Mac, now I'm trying it for the first time on my Xbox 360.

You get to pick party members when you leave the Ebon Hawk or whatever hideout you're at

Silly me, I just figured it out. You have to use the right trigger button which brings up the map, at which point their is an option for choosing party members during a session instead of returning to the hawk.
