I've been gone with some real life issues and also playing a few other games. Decided to get back to Skyrim today.
1. Just wondering what's new in the last couple of months with the game.
2. Any new mods come out that are "must have"?

Just started a replay as well. Been using some mods that enhance the followers (tweaks, specialised etc) and add more immersion to the game, without breaking it and some to make looting easier such as quest markers for stones of Barenziah, unread books have blue glow.
One I highly recommend is Midas Magic mod.
It creates aurum reactors where you can create spells (from formulae) that are otherwise missing from the game, such as feather, nighteye, open lock etc. Also creates a good use for gold ingots. One of the best spells transumtes iron ingots to steel ingots to lockpicks.
Other mods I added for fun, such as fishing, camping, bardic music, asteria. I also added some mods that add additional quests, jobs of skyrim is intersting if you want to live the life of a cook, messenger, bounty hunter etc. There is certainly a lot of content out there, but you need to be careful of conflicts; steam workshop - is missing a lot of the content you will find on Skyrim Nexus. If you use Skyrm UI mod, which needs the Skyrim Script Extender, you might want to hold off your replay for the release of patch 1.06 - as a new version of the SKSE will likely be required.

For SKSE you just copy the two .dll files and the launcher.exe into your skyrim folder and use the launcher to run the game. If you are using mods from steam workshop, then you need to run from steam to get to the launcher screen (as SKSE launcher skips it) to allow your mods to install. Then run the game through the SKSE launcher.
You don't need to remove the original skyrim.exe.

The 1.06 patch has just been installed by steam, so will take a day or two for the SKSE to release a new version compatible with it, though there is a beta

A new DLC called Dawnguard is coming out in less than a month. It promises to expand on vampire gameplay. There should be plenty of E3 related videos.
As for mods, I don't really know yet. Still holding back with purchasing the game.

Just a clarification: that release date (June 26) for Dawnguard is for Xbox 360 only.
