I've created a fighter in SoA with the intention of going f9/m? and I stupidly selected 'two weapon style' instead on 'dual weapon wield'. I could be imagining proficiencies here...

Is there much of a difference? I think so as I only have 2 attacks and I've researched there should be much more???

Is there some way (barring creating a new character) that I can change this? I can use cheat codes or fumble my way around with a text editor (notepad) if I'm given detailed instructions.

Two weapon style is the correct one. Two HANDED weapon style may cause some confusion if you're not careful. Put at least two points in your proficiencies for more APR.

2 attacks per round are normal for a character with 7-12 fighter levels.

There's a character editor called shadow keeper which can be used to reassign proficiency points and doing other stuff.

Be aware that you can assign new proficiency points at fighter level 9 and mage level 6,12,18,... and that wielding two weapons at the same time is quite uncomfortable if you want to switch to ranged attacks.
