How many pages are in the book? In other words, how many times can I turn the page to a new spell before the book is used up?

I think it is different every time. save before and get a spell you like. There arent that great spells really though, i used to take that high level mage protection spell, dunno its name..

No, it's not random. You can see clearly by using Shadowkeeper that there're only three or four pages.
All that can go wrong, will, unless it doesn't, but then, it might anyway. Xaosetic version of Murphy's Law.
