Classes of the Nameless One
Okay, the Nameless One started off as a fighter, switched to thief and is now a level 5 mage in my game... I suppose he regains his fighter skills once he is at least one level higher a mage as he used to be a fighter, but how can I determine what level fighter he used to be (and thus when he gets his fighter skills back)? I can't find it anywhere in the Statistics Screen... Am I missing something?

P:T is not a standard AD&D game, and the NO is not a standard multi-class character. He switches professions simply by talking to a party member about that option. Dak'kon can switch him to a mage or fighter, and Annah can switch him to a thief. You can do it anytime.
Annah and the NO can also teach one another about thievery, depending upon circumstances, and that means a little more experience. And you can use the three training centers that the Sensates offer to learn new weapons skills, etc.

NO starts out as a level 3 fighter/level 1 mage/level 1 thief, with the fighter class as the active class. From there on, it's up to you to level him up in each class. No matter what class I play for the rest of the game, I always level NO up to 7th level in the fighter class for an improved THACO, an extra half attack per round, and extra proficiency points, all of which carry over to the other classes. If I'm playing mage or thief, I make sure I hit the 7th level in that class first, to get the specialization bonus.
There's nothing a little poison couldn't cure...

Another useful point: although a nice profession-specific tattoo becomes available when you hit level 7 (the mage one, for example, the Tattoo of the Art, gives +1 INT, plus an extra level 1 & 2 spell), if you reach level 12 in the *same* profession first, you get an even better tattoo. Again looking at mages, you'll receive the Tattoo of the Magi: +3 INT, and doubles both 1st and 2nd level spells. The trick is to reach level 12 first with the same profession that you initially hit level 7.
