Throwing knives as well as crossbows and bow are covered by marksmanship. Personally I use a steel bow and normal iron arrow most of the time. The crossbow does more damage however.
Good sneak skill - 50+ - allows me to steal just about anything. I rely on potions like levitation, invisibility, and buff potions - I believe alchemy is a good skill for a thief.
Acrobatics and athletics allow me to outrun most mobs and climb up to a place that they can't reach me. Then I rain arrows down on them.
If you want to survive in direct melee you will need some good armour.
The glass armor rocks - it is almost as effective as ebony armor and weighs much less.

You can find a full set of this armor in ghostgate - the left tower - with a good sneak skill you can steal the whole set right from under the vendors nose!

With an armor rating of 50 glass is far and away the best light armor in the game - to compare - ebony which very good heavy armor - has a rating of 60 - not a bad tradeoff to get glass and have a much lower encumbrance.
My custom thief with good speed and athletics skill can run away from a tank fighter, climb some rocks or onto a roof with his high acrobatics, and rain death down on him with his bow and never take a hit.

Glass has higher armor rating than any medium armor and the only heavy armor that is higher is ebony and daedric. You need to fix it more often because it is not as durable - but it is well worth the trade-off - not to mention it looks killer!

Ned - sometimes crates are a good way - another is to climb on railings and then jump to lower or same level roofs - you can even get a running start and jump onto an NPCs head and then jump to a higher spot if you time it just right.
Also in caves and dungeons there are often planks, tables, boulders, etc. that you can climb on - npcs rarely follow you and this is slightly cheesy.
I was having a real hard time with my thief marksman until I started to seek out these "sniping" spots. I like the idea that my thief can outmanuever tank type fighters - that daedric daikatana is as harmless as a toothpick if I get out of range - my bow on the other hand - killer!

I have enchant as a minor skill - but I find it to be easier to use merchant enchanters.
Short blade and marksmanship are a must for a thief IMHO. For roleplaying purposes - if you are playing a sneaky thief or assasin type - the ability to do damage from a ranged attack "ambush" is great. Short swords raise your speed attribute - speed is essential for this type of character.
To summarize - for speed and agility based thieves marksman and short sword are great.
If you wanted to play a strength oriented thug type you might want to go for other weapons that raise strength.

@D2web, please don't attach your questions to totally different ones posted by other people. It shows a lack of respect. And you've already posted your question as a separate topic. Don't you think that's enough?
BTW, I answered you elsewhere.

To the Righteous belong the fruits of violent victory. The rest of us will have to settle for warm friends, warm lovers, and a wink from a quietly supportive universe.
"do all character types need to raise endurance?
The importance of endurance has been discussed on another thread recently - so I won't rehash it here - however this is my two cents on thieves and endurance.
The skills that raise endurance are medium and heavy armor and spear. If you were to make a thief and wanted high health points then you would want to choose one of these for your minor skills.
IMHO spears make the most sense. You could make a thief with medium armor as a skill - but I am a big believer in light armor - there is some really good light armor available and the lower encumbrance and foot speed is necessary for a good thief. The trick would be to use spears at lower levels to raise endurance fast and then switch to short blade and shield/block at later levels - they will raise quickly.
