--> Pause game.
--> Open protagonist's (your) inventory with some potion and Find Familiar scroll.
--> Open potion's window and click "Drink"
--> Replace potion's slot with scroll.
--> Return to main screen and unpause.
--> casts 'Find Familiar' instead of "Gulp".
note: will work with any class.

Don't put the potion in a quickslot, as you can't place the scroll there. Just use a backpack slot for the trick.

It may seem like I'm doing nothing, but on cellular level, I'm really quite busy...

Another way to go about it, quoted from Dan Simpson's BGII FAQ:
Trick: On the Official Interplay boards, Ryan Brady posted a trick to get
a Familiar for ANY class of main character. Yes, even a Paladin or
a Fighter can now have a Familiar!
Here's how he did it:
1. Export your main character and save your game.
2. Copy the saved game's subfolder (i.e. "000001-Quick Save")
from the SAVE folder into the MPSAVE folder.
3. Start a multiplayer game and load your save.
4. At the character arbitration screen (the screen where you
select your characters), remove the protagonist and create a
new character that is a mage with the Find Familiar spell.
Make sure this mage's alignment matches the type of familiar
you want to create (i.e. if you want a psuedo-dragon then
create a lawful-good mage).
5. Continue to load the game. You may have to rest first to get
the Find Familiar spell memorized.
6. Cast Find Familiar, but don't talk to the familiar yet.
7. Save the game.
8. Reload the saved game. At the character arbitration screen,
remove your mage protagonist and import your real protagonist
character (the one you exported back in step 1).
9. Continue to load the game. Once the game loads, you'll see
the familiar still sitting right there beside you. Even if
you're not a mage, you can still keep the familiar.
10. Save the game again and quit. Copy the saved game from the
MPSAVE folder back into the SAVE folder.
11. Start in single-player mode and reload your saved game.
Enjoy your new familiar!
One thing to keep in mind here is that you're still limited to
only giving a familiar to the protagonist. You can't give a
familiar to Imoen, Edwin, Jan, or any of the other NPC mages.
However, if you're not a mage you can just give yourself a
familiar and pretend it's theirs (you're just holding it for
them).
Editor's Note: Also, you won't gain the bonus HP from that
Familiar (the mage that cast the spell gained the
bonus HP's).
