I've never played to 20 th level monk, but I can give you some ideas on multiclassing a monk..played one to Lvl16 in the official campaign.
Multiclass your monk with 3 levels of Rogue. My Lvl6 M3/Ro3 was absolutely lethal, Stunning Fist+Sneak Attack was unstoppable. Plus you gain levels faster if you take the Rogue levels before the Monk levels.
I had a M9/R3 char by Lvl12. By Lvl 9 in this build in the OC you would have Knockdown/Imp. Knockdown and some +4 or +5 gauntlets. The attack bonus is so high that Imp. Knockdown works every time - and sneak attack takes care of the rest. I got so bored with this char that I just gave up at Lvl16. It was just too easy.
The negative of course is that you have to wait 3 more lvls to gain all the cool monk abilities. But I felt the tradeoff was worth it..

No, not in NWN. In D&D forgotten Realms, and probably in the Players Handbook, there are very detailed rules as to what Monastic orders you can join, and how far you can multi-class to another class. Most orders, for example, insist that your Monk levels be greater than any multi-classing levels. But this is only if you role play your monk. In NWN, anything goes.
Some possibilities:
Shining Hand: (Good) Monks of Azuth. Can Multiclass to Wizard
Dark Moon: (Evil) Monks of Shar. Multiclass to Sorcerer. Can have Sorcerer up to 2 levels above Monk. Only Order that allows this.
Old Order: (Neutral) No Patron. Can Multiclass to Rogue.
When I multiclassed my Monk in the OC, I played a Monk of the Old Order. It's more fun when you cannot use a robe/boots/cloak of another order for RP reasons. I mean, a monk of the Shining Hand would never use a robe tainted by the Shadow Weave - Dark Moon Robes.
And the Forgotten Realms Handbook gives rules on Multi-Classing Paladins too. I haven't checked them out properly as I don't play Paladins...but I've seen them.
