What exactly do items ( masks, visors....) that grant immunity from mind-affecting protect you from?

Nope. The only force powers repelled by mind-affecting immunity are fear, horror, insanity and slow (but not afflict or plague).

Masks (Headgear) do a lot: Immunitiy to certain force-powers (I think stasis is a manipulating one...) and some give incredible bonuses to computer, security, and other skills.

I get at least light armor for may Jedis, so they can wear severals headgear. (E. g. for Jolee, as a consular, it's good to boost computer and get him a visor with computerbonus. So you don't need the droid or Zaalbar for hacking.)
