You can't be jack of all trades. Unless you cheat. In which case you can definitely be jack of all trades.
If you don't want to cheat:
-stick with flurry, maybe the critical strike combo (critical strike double bladed lightsaber). (guardian)
-magic man. force lightning, drain life, insanity, plague, kill. (consular)
In order to be the best magic man you possibly can, only level up once on the ship, then stay on lvl 2 until you become a Jedi.

Yes, he *is* extremely easy. I could understand his being slightly easier than you, but the fact that all those power-ups are needed shows once again that Bioware under-estimates its audience for intelligence (puzzles), sophistication (conversation) and strategy/tactics (combat). Or am I over-estimating them, based on the forums...? I don't think so. We know for example that Bioware deliberately dumbed down many of the challenges in BG2/ToB, thanks to one of the development team who released the original powerhouse bosses in all their splendor as a mod.
Malak shouldn't have been that much of a pushover, in any case.

the lightside consular isn't nearly as powerful, bcuz w/ the increased dark side spell cost, you won't be able to use them as well.
you can try for force valor, heal, master speed, force immunity, force wave, adv.throwsaber as a consular, but i don't like it at all. you have to cast like 5 spells to prepare you for the battle and your only offensive power is a neutral spell. the only way for this to work is cheat.
the best lightside option is guardian. flurry+critical strike, as well as two handed combat. get darth bandon's lightsaber. in order to do that, collect manaan as ur 2nd to last star map (dantooine, tattoine, kashykk, then manaan). don't change his color crystal. get a solari and maybe upari/sigil, and you'll do +10 and +1-8 /1-8 vs. dark side. that's why his saber is so great. get a high dexterity, as this affects your attack rolls, not strength. your only spells will be heal, speed, and maybe force wave, if you can.
you should be able to plow through enemies with speed and bandon's saber. then force wave with mass opponents, and heal when you get hurt.
but, if you want to cheat on xbox, i can show you how.

awareness...no
treat injury...no
repair...do you use hk-47 that much??
skill points are very unimportant. which his why i never go sentinel/scout.
fighters get extra feats, less magic.
mages gets some less feats, but tons more magic.
sentinels get little of each
they're bad.

ok yes i did use hk-47 for 3 planets because i went to the walking carpet planet last, personally i dislike walking carpets. and i upgraded him i also agree with fable, my first char was a sentinel in which i found i had enough FP to spam enough of my dark side skills but also plenty of AB and dmg to kickass when emeny got close and personal, P.S. i also used HK for awhile just cause i think his commentary is quite funny.

So a sentinel could get:
drain life, force storm, force wave, master speed, force immunity, plague, insanity, and kill? no, but a consular could, and still have enough room for flurry + two handed + a few more, which is all you need to be a good fighter.
sentinels are the 'skill' fighters. overloading conduits and reprogramming droids. consulars don't need skill points.
i've got a 18:38 run with a guardian and 16:22 run with a consular. all quests totally completed.
you're right that you only need a part of each, but you really want more powers than you want feats. that's why a consular can be a much better wiz. and only a slightly worse fighter.
i tried sentinel, and completely level saved, thinking it would offset the FP difference between sentinel and consular. it did, but the sentinel was a worse spellcaster + a worse fighter. granted, he had more skills, but the 'open all doors' feat was whooped by my supreme bashing skills.

Scout/Guardian is a good all-round lightsider build (yes, I like skills too). 5/15 is my preference, 3/17 if you feel you need the extra powers. Focus on strength and wisdom (and for the last damn time, strength or dexterity affect attack rolls, depending on which is higher). You can afford to splurge on strength as a lightsider, since there are so many light side-specific wisdom boosts. Flurry with a double-bladed saber is a good staple, but critical strike can be incredibly potent with a couple of single blades. The only really important power is master speed, and maybe valor, but wave is always good to have as well.

Well, mr. Dark Lord was not so easy for me. In fact, it was the only difficult fight in the game I had. I was not able to kill the captive jedi's (no applicable force powers) and was not able to place mines (no skills invested). Also, I did not have the supercrystals that you can get from the Yavin space station because when I thought I would drop by there I could not go there anymore because the plot had advanced too far. So I had to defeat Malak just by plain attacking him and injecting myself silly between attacks.
