I'm having a heck of a time trying to defeat the Demon Knights. Any
suggestions?

Your party sould be strong now, try to use Improved Haste spells on your fighters and keep hitting then.
Also make sure that you have the best equiment avaible, with drow items, you sould have little trouble to deal with those deamon knights.
Also use summon creatures, offensive spells on those knights.
- Waterdeep city constrution.

- Shadowdale low level adventure module.

- Rashmare /Thay high level adventure module.

I found that the ability and subsequent strategies in dealing with the Demon Knights depends on the type of party you have. A party that weighs in heavily in melee should have no problems with these guys, after the standard group enhancing spells. For more balanced parties, the trick is holding off the two that appear at the southern edge of the room, while you destroy the other three. Things I found helpful in keeping them 'entertained' - thief traps, Glyphs of Warding, Delayed Blast Fireball, Skull Trap, and of course some sort of helpers (keep them close to you until previous area of effect spells go off, or you'll have them go hostile...) The Horn of Valhalla, Black Spider Figurine, Bottle of Efreeti Summoning, Aerial or Fire Elementals, etc. all do the trick wonderfully. I hope any of these tips can help!

i have sumoned a bunch of skeleton warriors with my socerer solo(about 10 with the help of project image) and they taked care of the demon knights

i used o lot of traps to kill them
the usual thief traps and skull traps
summon some pets always works, they keep the other knights busy while u wack them one by one with your party :D :D

also try to stay in the south west part of that room, that way you are not attacked from all sides.

I suggest casting wizard's eye into the room and close the door. The demon knights will go off on it. This will give you time to send in 2 or 3 fire elementals (hasted works best). The elementals will take em down to badly injured at least, then you can send in your fighters to finish them off, without losing any life. pick up the girdle of frost giant strenth, the last piece for crom faeyor

one of my favorite ways to deal with them is to use limited wish and send a horde of bunnies to absorb all the spells, and then one or two moredenkain's swords.
I would be a serial killer if i didn't have such a strong distaste for manual labor

There's nothing a little poison couldn't cure...

I lured them out one by one, doors are very narrow ;) They spawn scattered, and it is not necessary they must see the character overseeing the summoning ;)

I am doing the following with the demons:
1. Send one in the room with the sacrifice.
2. Direct the sacrifice to the altar and run with your guy to the doors.
3. Once you see that the sacrifice is done, leave the room and close the door.
4. Lure the demons out one by one and close the door behind them. Fight them one by one.
Please note: the demons are level-draining.
