Welcome to the forums!
It sounds to me like you are thinking of a very powerful party. I would suggest an Undead Hunter rather than the Inquisitor, since immunity to level drain is kind of nice in this game. Personally, I'd consider another spellcaster, perhaps a sorcerer, in the last slot, if you decide to add an additional party member.
You'll likely go mopping up through most places, but you won't have the inter-party banter that you would if you had NPCs along for the ride.
That being the case, I'd suggest some mods that increase the difficulty levels so that you don't get bored
I tend to focus on NPC mods personally, but others here are well acquainted with various tactics mods.

Making your own party will make the game really easy and you will probably loose interest in it really quick. If you want to do your own party then take a look at http://www.spellholdstudios.net/ there are alot of mods there to increase the difficulty of the game for example, you can install SoA, TOB then TDD (the darkest day, new weidu version) SOS (Shadows over Soubar, also new weidu version) TS (Tortured Souls) or NEJ (NeverEnding Journey). To make some of the major encounters more interesting I would suggest Wesley Weimars Tactics Mod (its evil hard!! ) and go over to http://gibberlings3.net/ and check out the quest pack and some other mods that they have available. For some of the best NPC's available head over to http://chosenofmystra.net/ they produce alot of high quality NPC's
Hope that helps
