ok..so far I've had about three different types of sabers:short sabers, regular, and double-bladed. So whats the best to use?
its entirely up to you and what you prefer. my fave is a lightsabre in one hand and a short lightsabre in the other. although i also quite like double-bladed ones too. the only advantage to having a single lightsabre is that you get a better chance to hit and you don't need to use feats on two handed fighting. but i wouldn't say one is better than the rest. its just personal preference.

Give me 2 longs... one in each hand. Love the look (although there is little visual difference between short & long)
A double bladed means 1 hilt to boost (2 stones, 1 color, 1 lens, emmiter & cell?... forgot tha last one... just got out of work.... sorry)
Two swords (1 each hand) doubles all the above. My preference is 2 hilts to build (as an aside, 1 usually will focus on wacking droids in the 1st / 2nd part of the game, the other blaster deflection & attack. Then the end game... pure blaster deflection & damage)

I prefer the double bladed. I easily come up with good combintions of crystals and such for it and it looks good with my character. The three Jedi's I normally use, Atton, Visas, and my charrie all have double bladed. Disciple has two single bladed (long) and Kreia had one long. I'm not sure but I think you can turn Mira into a Jedi. One of my friends said something about it, but I aven't been able to yet. She rarely talks to me and now I have little to no influence opportunities available. If she were a Jedi, I would probably have her holding a double bladed. I percieve the double bladed as more dangerous looking.
Single blade!!!!
First of all it give you a feel like a real jedi from the movies.
Second, with Master Dueling you get +3 to attack and +3 to defense which work very nice with most higher Lightsaber forms [especially form VII (Juyo) - you can actually deal more damage than with dual wield] and you both hit more often and are harder to hit.

I go with 2 long sabers. The sheer variation in what types of damage you dish out can make you a really versatile jedi. Sometimes I'll focus one saber on critical hits and damage crystals, the other i'll up the blaster bolt deflection, giving me a good mix of offensive and defensive options.
Plus I like to have more than one colour saber. =)

Sometimes I do what I want, most of the time, I do what I have to.
I'd definitely go for 2 sabers (don't care what kind) when I'm DS, because I tend to use Force Powers to deal damage, rather than weapons. Hence I use my sabers mainly as ways of boosting may stats through crystals, and for blaster bolt deflection, and 2 sabers means space for 4 crystals to do this.
As a lightsider, I don't think there's much advantage, as a lightsider tends to rely on buffing powers to boost him rather than saber crystals, but usually uses sabers to hit people with. Therefore I'm concerned mostly with damage and +attack when designing lightside sabers, and it doesn't matter whether I've got 2 separate sabers with thes properties, or one double.
Query: What is the technical difference between an unmodified double blade and an unmodified double wield? Gut feeling tells me that I don't deal as much damage with a double-blade, even though you get the same number of attacks...

Hmm...
Jedi Weapon master can take superior 2 weapon fighting III and superior weapon focus: lightsaber III and get great bonuses to attack... Plus with an assortment of decent powers...
